Down San Antonio way they are called Chicharones
I've never made them but after your post I am very tempted to give it a try.

You won't be disappointed , you can buy pork scratching s in a bag at pubs here but it's not even close to home made, you honestly can't stop eating them when you start,especially with a beer. I took about 55 bits to pub last night for my circle of mates, they just love it. I hope someone over your way tries them.
