Pork chops don't need long in a Brine may be 30 min
Basic Brine
1/2 gal water
1/4 cup salt
1/4 cup sugar
Never met a cow I didn't like with a little salt and pepper.

I love brined pork chops, especially loin chops. Sometimes I'll use brown sugar, or even honey in the brine.
