Spare Ribs to St Louis Cut
Store was out of St Louis Cut so I took some pics of my process. I learn this stuff on my own so tips and comments are welcome!

DO NOT EAT THOSE! Send them to me for proper disposal Look pretty darn good to me good job! I always but Full racks and trim my self it costs less and the trimmings have a lot of uses.
Never met a cow I didn't like with a little salt and pepper.

I'm still very new with not much guidance, any suggestions for the trimmings? I've been using some for beans and some for pulled pork tacos (crock pot) - easy enough to pull the cartilage out.

I just hit 'em with S&P and smoke along with the ribs, What the cook don't snack on Et used in place of ham hocks in collards and beans. the little piece of skirt from the back normally ends up as fajitas or al pastor taco meat.
Never met a cow I didn't like with a little salt and pepper.

Looks great Limey. I just vac seal the trimmings then smoke them all at once for fajitas.
