Re: Cutting my own pork chops
The size of the chop is relative to the hunger of the knife wielder. I prefer a chop in the 1/2-3/4 " thickness and I double it for stuffing.
Never met a cow I didn't like with a little salt and pepper.

well let's see, when i only grill them them, i like a chop that is approx 1 1/2" thick. when i use em in a crock pot type dish i go for around 1/2"-3/4" thick and for stuffing em i stick to 1" thick. hope that helps

Re: Cutting my own pork chops
I usually buy a boneless loin and some brats. I cut the loin in chunks about 2" longer than the brats. Then I cut two X shaped holes length wise in each loin chunk with a thin fish fillet knife. Next after removing the peelings, I partially freeze the brats and insert them into the two X shaped holes. Season the thing with rub and cook. When it's done I slice it as thick or thin as I like. Each slice will have two pieces of brat and they look like hog snouts.
