Pork Injection

Used this on a whole hog this wkend and would definitely recommend, I left out the MSG:

2.5 qrts of water
1 qrt Peach Nectar
1/2 C- Morton's Tender Quick
1/2 C- Distilled White Vinegar
**Optional, 1/2 C- MSG (Ac'cent Brand)

Place on low heat and make sure everything is dissolved. Let cool @ room temp before injecting.

What is Tender quick I just saw it at Krogers, how do you use it ?

Morton's TQ is a curing salt, it is used to help preserve (cure) meat.
Here is a link to Morton's they have recipes and instructions. A word of caution: Morton sells salt so if you follow their recipe and the end result is a bit salty........ :dont:

I wouldn't use tender quick on any kind of meat ....except pastami.....

Between the nectar, water and cooking time ithe end product really isnt that salty ... but then again even if it was to your taste toning it down is alway an option :wink:
