Pork Chops with Lime Salsa

6 pork top loin chops boneless cut 3/4 “ thick
1/4 c. red onion finely chopped
1/4 c. lime juice
2 serrano or jalapeño fresh seeded ñ finely chopped
1 T. toasted sesame oil
1 tsp. cumin powder regular or smoke it a little
4 plum or roma tomatoes diced
1 cucumber small seeded ñ chopped
2 green onions sliced
2 T. cilantro leaves fresh snip
1 T. honey
3 T. jalapeño jelly

Trim fat from chops. Place chops in a plastic bag set in a shallow dish.

Marinade in a small bowl -add ñ mix onion- lime juice- serrano peppers- sesame oil ñ cumin powder. Reserve 2 tablespoons marinade for salsa. Pour remaining marinade over chops- seal bag. Marinate in refrigerator 2 to 4 hours turning bag occasionally.

Salsa~ medium bowl mix 2 tablespoons marinade- tomatoes- cucumber- green onions- cilantro ñ honey. Cover ñ refrigerate until ready to serve.

Drain chops- reserving marinade. Remove marinade to small saucepan. Addjalapeño jelly to marinade- cook ñ stir until mixture boils-set aside.

Grill chops on rack of an uncovered -grill directly - medium coals for 8 to 11 minutes or until chops are slightly pink in center n juices run clear, turning once and brushing occasionally with jelly mixture the last 5 minutes of grilling. (Or- broil on unheated rack of a broiler pan 3 to 4 inches from heat 6 to 8 minutes- turning once -brushing occasionally with jelly mixture last 5 minutes of broiling. Serve chops with salsa.

Note~ use Ur own or brought salsa in place of the above.
