Bacon~
1 lb. thick sliced bacon cut in half
1 egg
1/2 c. milk or cream or half ñ half
1/2 c. flour
spices optional any U like
oil for frying
~Creamed Gravy
3 T. drippings from bacon or 3 T. butter
3 T. flour
2 c. milk
2 T. heavy whipping cream
salt ñ pepper heavy on the pepper if U like
garlic granular sprinkle a little to UR taste
Bacon~
Mix egg ñ milk by whisking well
Place flour in another bowl - season to taste-garlic granular- pepper- salt- Cajun – lemon zest ñ whatever seasoning U like or no seasonings at all. Make it UR Way or several ways
Double dip bacon - first in egg mixture- next into- floured seasonings ñ repeat.
Fry in oil until golden brown. (Sometimes I pre-cook the bacon in the micro -drain on towels before coating.
Serve with cream gravy for dipping.
Creamed Gravy~
Using a skillet heat drippings or butter - medium high heat. Whisk in flour until well blended- cook medium heat 2 to 3 minutes-till bubbly. Remove from heat ñ gradually add milk whisking constantly- return to heat ñ whisk until gravy thickens. Whisk in cream- salt ñ pepper with any other seasoning U may like.

Mechnech ~ Those fires now are the 3rd worse in Arizona History n still going. They found out human set n iver 200,000 acres burned. I swear people don't think. Fires way south of me n they headed for Luna New Mexico.
I pray for all those working those fires n those who have to evacuate.
Yea.. try the chicken fried bacon I used the thicker cuts is why I suggested pre micro or even cooking them, I like the garlic granular -salt n pepper right on the uncooked bacon.. Not much garlic sprinkle lightly. In the flour I added some diced serrano's n sometimes just add powdered chipotle in flour. When I not watching my weight I mix mayo with the eggs n beat them.. Oh my golly... Than I grip... for a week about the calories... but ohhhhhhhhh so gooooooood with french fries n the creamed gravy over them..lol Enjoy
