Pork Loin with Red Pepper Jelly ñ Cilantro

4 lbs. pork loin
1/3 c. red pepper jelly
1 tsp. amber agave optional
kosher salt to taste
cracked pepper to taste
1/4 c. cilantro leaves chopped fresh

Preheat oven 350°F.
Salt ñ pepper pork. Lightly oil a baking dish. Mix red pepper jelly with (agave-if using- heat until jelly till it liquefies- brush over meat

Place in pan fat side up. Bake 30 minutes a pound- or until internal temp is 160°F.
Brush with remaining jelly- sprinkle with chopped cilantro ñ serve with pan juices.
A mistake is sometimes a great creation
