Bacon jam

1 lb. good bacon
4 - 5 cloves of garlic
1 medium onion
4 TB brn. sugar ( I used dark)
about 8 shakes of Louisiana hot sauce
1 1/4 cups coffee
1/4 cup apple cidar vinegar ( I added a splash as it cooked)
1/4 cup maple syrup (I substitued butter maple syrup and squirted in a bit more as it cooked)
1 or 2 chipolte ( depends on your taste) black pepper to taste

Cook bacon in batches until crisp - cut into 1 or 2 inches pieces. Remove from pan.
Leave enough bacon grrease to cook onion and garlic.
Cook sliced onion and minced garlic until onion is transluscent.
Add bacon back to pan and add the rest of the ingredients.
Simmer for around 2 hours, adding a 1/4 of water every 25 minutes or as need.

Let the finished product cool, and place it all into a food processor. Process for a few seconds at a time until fully incorporated. You want the bacon to still be identifiable, if you know what I mean. You don't want mush!

Ready for toast, biscuits, eggs, taters, etc., etc.

Dang Jack, I am thinking a man could hurt himself with a dish like that. I don't see anything not to like, pass the biscuits please. CF :D
