Serves 6
~1st Group ingredients~
1 lb. ground pork lean
2 ozs. chorizo sausage chopped
6 slices bacon diced
1/4 c. dark rum
1 T. soy sauce
1 tsp. sesame oil
2 garlic cloves crushed
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. red pepper flakes
1/8 tsp. ground cloves
2 T. olive oil
12) 8" floured tortillas
~2nd Group ingredients~
1 c. Monterey Jack cheese grated
1/2 c. coconut shredded
1/2 c. crushed pineapple drained
1/4 c. butter melted
Place all the 1st group in large bowl- Mix well- cover - refrigerate 2-24 hours.
Prepare medium-hot fire in grill.
Heat olive oil in large skillet – medium high heat- add pork mixture - cook - stir to cook pork mixture completely- about 5-6 minutes.
Divide tortillas into two batches- divide pork mixture evenly ñ spread over each of 6 tortillas.
Sprinkle with cheese- coconut ñ pineapple.
Top with 2nd tortillas- brush with melted butter on both sides- grill directly over fire until cheese is melted - tortillas are crispy ñ browned.
Turn carefully with large spatula.
Cut quesadillas into wedges to serve on serving plate
Notes~ serve with orange slices
