SurfinSapo's Comfort Meatballs & Fideo/Veggies

Ingredients:
"Meatballs"
1lbs ground beef
1lbs ground breakfast sausage
2 slices of bread
1 egg
1/4 cup milk
1 tablespoon of Ralph's Beef Caldo Seasoning

"Fideo-Veggies"

1 box of Vermicelli - Fideo
1 bag of mixed veggies of your choice
3 table spoons of olive oil.

"Gravy"
Fat from baked meatballs
Equal amount of flour
Salt & pepper

Cooking Instructions

"Meatballs"
In a mixing bowl, put 1 slices of bread and pour the milk and one egg on them. Mix with clean hands.
Add the sausage & ground beef to the bread and mix well. Add seasoning of your choice.. I use Ralph's Beef caldo mix. Make gold ball size meat balls and spread out on a baking sheet. Bake on 350 degrees for 20 minutes of until tops are browned.

"Veggies"
In the mean time, in a frying pan heat up the olive oil and fry the fideo-vermicelli on medium heat until light brown. Add the mixed veggies and some water and seasoning of your choice. Simmer until the fideo-vermicelli is soft. Remove from heat.

"Gravy"
Dump the fat drippings from the baked meatballs into a frying pan and heat to medium. Add equal amount of white flour and stir until the gravy is brown. Be careful not to burn. Add some water and salt and simmer until thick. Thin it out with more water if wanted.


"Serving"

Scoop some fideo-veggies onto a plate and lay 5 or 6 meatballs on top. Then drench with hot gravy. You will love this meal... It's a Southern Thang!!!!
