Boy that's mighty fine looking enchiladas. I've done something similar with left over pulled pork. How do you thing those same ingredients would mix with pulled pork? Would the enchiladas keep well if they were put in the deep freeze and then reheated in a chafing dish?
The reason I ask is that my son is getting married in June and he asked if I would contribute some BBQ for the reception. I'm trying to put together some dishes that can be prepared in advance and then heated up the day of the wedding. Any suggestions are welcome.
