Beef Bottom Roast Cook.

Trying a beef roast tomorrow on the Old Smokey. Paring it with Potatoes, Onions, Carrots grilled in foil. I plan on making a wine broth reduction sauce for the roast.

Injected it with some doctored beef broth this evening and rubbed it with a thyme, salt, pepper, ect and olive oil based rub, before pic.

Put it on just before 2pm, set the internal temp alarm for 120 degf, I cook indirect to get the smoke and will finish it over direct heat to medium rare. I am using Kingsford Apple, charcoal.

Now for the review. Wife loved it, I liked the flavor of the meat and the reduction turned out spot on. The rub needs less Thyme, probably half as much. The cook was just about perfect. I will definitely do it again, just modify the rub a tad. Injecting, imo is a must do for a roast, and I always inject my briskets. I cooked it to 150 internal as my wife likes things done more than I do.

Made a chuck roast of the Akorn yesterday just because I felt bad about not using it but I wished I had did it on the Old Smokey now. Mine didn't turn out near as pretty.
