Fancy meat loaf

Here's one we like (and it's not too hot for my wife's palate)..

1/2 cup Parmesan (ground, not shreds)
2/3 cup bread crumbs
2 lb ground beef
1 T olive oil
1 onion
1 garlic clove
3/4 cup ketchup
1/4 cup apple cider vinegar
3 T brown sugar
3/4 cup chicken broth
1/2 t cayenne pepper
1/2 cup fresh parsley
1 T table salt
1/4 t black ground black pepper
2 eggs

Cook at 350 for 60 to 90 minutes depending on tall and fat or flat and thin.
Internal temp should be at least 150 and up to say 160.
