Stacked Enchiladas n UR favorite Sauce

Here is another one I make all the time. Addictive they are. Easy when U have ingredients already made or in UR freezer..

Have favorite shredded meat either beef or pork fixed Mexican style ready to go.

Using UR favorite homemade red enchilada sauce or brought -heat it in a pan.

Roasted Green Chiles or canned.

Take 3 floured tortilla's (6" or little larger size
Dip 1st tortilla in the enchilada sauce n place it on a plate with little sauce on bottom first
(plate or foil that can be micro or oven baked or just on the BBQ grill.

Next add lots favorite meat to cover whole top of 1st tortilla - as many roasted green chilies (no seeds -diced or use canned drained ones-

Layer 2nd tortilla on top of that-(no dipping in sauce just add more meat to cover

Add 3rd tortilla dipped this time to top of meat..

Laddle heated enchilada sauce over top n place in oven -mirco or on grill to heat it all through

Add little shredded cheese to the top n let it melt. (cheddar or Asiago or Mexican Blend

Serve with little shredded lettuce on top with 1 black olive n extra sauce on side.
little Mexican rice n beans on side - what a meal

Note~ If U have children leave off the green chiles - this is just as good
I like to make my own enchilada sauce spicy n this is not only filling but a hit with all whom eats at UR table.
