Flank Steak Marinated ñ Verde Hj’s

1/3 c. lemon juice fresh
3 T. white vinegar
¼ c. green onions ñ few stems chop fine
3 garlic cloves large chop fine
½ c. olive oil (use a good oil
1 tsp. or little more Mexican oregano dried
1/8 tsp. rosemary dried (more if U like rosemary
½ tsp. kosher salt
1/8 tsp. black pepper medium ground

Using large or 2 zip lock bags mix all the above in them
adding steak

2 lbs. flank steak

Seal –flank steak in bag or bags -marinate in refrigerator –turning about 4 hours or more

Remove steaks to prepared grill on direct high heat about 5 minutes per side for medium rare meat.
Let meat rest about 4 minutes before slicing.

Before cooking prepare salsa verde in blender or processor-
¼ tsp. anchovy paste or use 1 anchovy fillet (don’t turn up UR nose
2 garlic cloves
½ tsp. kosher salt
1 T. lemon zest
2 T. lemon juice
2 T. red wine vinegar
4 tsp. thyme leaves
2 c. cilantro or parsley or mix both together

½ c. use good olive oil

Mix all well in 1st group of verde sauce with thyme –scrape down sides of blender
–add 2 cilantro or parsley - add oil slowly with blender running –mix until just smooth
Pour over flank steak. Serves 4 to 6

Notes~ One of these days will try making this with limes insead of lemon
somewhere here on this site or in my files I have posted a delicious flat bread with rosemary from a restaurant Monti's la Casa The smell n taste is wonderful with this all..n with beer -wine or maragrita...
