Tri Tip Grilled in Bourbon Sauce

~Marinade
3 T. olive oil
2 T. Dijon mustard
1/4 c. bourbon whiskey
1/3 c. reduced sodium soy sauce
2 T. red-wine vinegar
1T. Worcestershire sauce
1/4 c. light brown sugar
2 T. red onion minced
1 T. garlic minced
1 T. kosher salt
2 tsps/ black pepper

~Beef tri tip
2 to 2 ¼ lbs. lbs tri-tip roast
Oil for grilling grates

Using glass measuring cup, whisk together all marinade ingredients.
Puncture tri tip all over with fork or meat tenderizing -place in zip lock bag. Pour about 2/3 marinade over meat- reserve remaining marinade to use for sauce. Seal bag- squeezing out e air. Massage outside of bad - working marinade in tri tip. Refrigerate 4 hours or overnight.
Remove tri tip from marinade -about 30 minutes before grilling (discard marinade -set meat aside while grill is heating.

Preheat grill to medium-high. Oil grates - heat several minutes longer. Add tri tip - sear on all sides to get nice grill marks. Move to indirect heat (no heat source under the beef- finish cooking to desired degree of doneness about 35 minutes (depending on size ñ thickness for medium-rare or until an internal temperature reaches 125 ° F.

Remove meat from grill - let it rest. The temperature will continue to rise to about 130 ° F. than heat reserved marinade some -thinly slice tri tip against grain -drizzle with sauce.8 servings.
