Shredded Parmesan cheese (serving cups)
Apples (they supplied)
Handful or so of sweetened dried cranberries
Half a handful of raisins
2 or 3 tablespoons of chopped walnuts
8 oz lemon fat free yogurt
Lemon juice (to coat the apples to keep from browning)
1/4 cup or there abouts of chopped celery
some lettuce leaves

Parmesan cups
Preheat oven to 350 degrees
line a baking sheet with parchment paper
place piles of cheese on parchment paper making a circle of the desired size
place in oven for about 10 minutes until melted and brown
remove from oven and let sit for about a minute or a little less
carefully invert cheese on paper over an inverted glass and peel off paper
carefully mold cheese to glass shape and leave cool

Salad
Peal and dice apples into smal bowl
squeeze lemon juice over apples and mix to coat
mix in remaining ingredients except lettuce leaf
place lettuce leaf inside of Parmesan bowl so it covers the bottom and sides
fill bowls with apple mixture

I can't wait to retire next year. Sooo... I can get into Texas to see how I stack up against Texas teams. The brisket mecca. If my brisket can hold its own against Texas teams I'll know I got something. (Am I suck up or what?)
