that was my concern, making sure my stuff was done and ready for turn in. I practiced 4 weekends in a row and took notes, now you don't have to practice that much but I was struggling with my brisket and chickens and I wanted to make sure I had them down. But practice and taking notes on times, temps can really help you. KCBS allows 5 minutes before and 5 minutes after actual turn in time and we had all our stuff ready to go at least 5 minutes before turn in time.

Yeah I'd say I was pretty excited to get the calls but believe me, unfortunately I go into every task not expecting to come out on top, that's just the way it's been for me.

I got some advice on the chicken, some pieces were charred on top and others weren't. If they all had some char they would have scored better believe it or not. Also, I should have put 9 pieces instead of 6. I noticed that the more full my box was the better presentation score I got. Like I mentioned about the brisket, I believe adding the burnt ends helped my scores.

thanks again everyone, this event will be remembered for quite some time.

I'm looking at an event mid october that has a sausage category as well. My father in law and I have been making sausages for the past 3 years and recently I put together a chicken, spinach and feta sausage that everyone seems to love. We'll try our hand at that and see what happens.
