All the cook offs that I know of around Texas, if you are cooking contestant you cannot sell anything. Giving out free samples are excepted as long as its descreet and in moderation. Vending requires a city, county permit in most places...
R&O Custom Offset....It rocks!!!!

In Colorado, there are Vending teams and non-vending teams. Vending teams have to a Food Service license, which means that they are a caterer w/a commissary or working under the license of an eatery.

The folks putting on the contest sell tickets that you use to buy whatever. The contest organiser collects the tickets at the end of the cook-off and some time down the road you get a check for the amount of the tickets less their take, er rake (about 20%)

Thats how they make their money, that and beer sales.

In Texas they have something very similiar called cooks choice, it's not required a contestant enter. The promoter sells cooks choice tickets for X amount to the general public whom after sampling cast a vote for their favorite choice. The winning contestant is recognized at the awards anouncements and on most ocassions recieves a percentage of the total dallor amount collected. At most rural community fair type events only local orginazations are allowed as food venders and rightly so; this is normally their biggest fund raiser of the year. Competition cooks are normally to intent on their turn in products to deal with vending or peoples choice events.
