I've been contacted about seeing what the response in Texas would be to a whole hog class conducted in Q1 or 2 of 2014.
Mark Lambert of Sweet Swine of Mine who most recently won Memphis in May along with the cook of the 2013 Jack Daniels winning Ribs would be involved.

Looking for 20 -40 participants probably $200 per and they will be doing 2 -3 hogs.
