I thought I'd give it a go. Didn't want to fry the fish, so I sprinkled with rub, and put them on the grill. My wife used a George Foreman grill and melted cheese between a couple of tortillas. Some pico, lettuce, more cheese, and of course, the fish. Turned out good!

Dang, ya'll are slowly making me want to try that myself.....it just sounds fundamentally not right, kinda west coastish....on the other hand, it does look pretty darned good....guess I gotta add fish filets to the grocery list, any suggestions? I also have thought it was just fundamentally wrong to have ....FISH tacos! Yuch! That is until I tried them last week-end below Zapata, Tx....THEY WERE GREAT! The guy also used the flaked-up fish on corn tostados with pico-de-gallo sprinkled over the top.
