Ribeyes... again...

Don't ya hate it when ya just had a great big steak the week before when the family decides that steaks sound good for dinner???
Well, that's what happened here tonight (except for 1 kiddo, she wanted left over pork/pineapple kabobs). Thawed out a few steaks, fired up the grill and baked some taters. This was a real meat n tater dealio... Not another veggie to be seen. :P

Decided to do the salt thing with these, so I covered 'em with coarse salt for about 40 mins.

Rinsed all the salt off and patted dry

Seasoned with coarse salt and fresh cracked black pepper

Don't ya hate it when yer cooking and the phone rings? Got busy talking on the phone and over cooked my steak... Heck, I ate it anyway.

Sure... The salt does kind of a quick osmosis brining kinda thing. It will pull a bit of moisture from the steak and in turn, pull just a bit of salinity back into the meat. I've done this on and off again and I like the way it brings out the beefy flavor of the meat. It does not really make the meat salty, but back off on the salt in your final seasoning just in case the first time ya try it.

Same thing we had Sunday night, done just about the same way! I also did some moinks and a few other tasty finger-food ideas I am working on for the smoker. Great minds think alike...
