I had a rack of spares in the fridge that I just had to cook tonight and I didn't have time nor the desire to fire up a smoker. I already had the grill going after cooking up some chicken halves for dinner, so I seasoned the rack with coarse salt, cracked pepper and garlic powder. Grilled a while, flipping every so often. After about 30 mins, I wrapped in foil for about 30 mins with some Sucklebusters BBQ Sauce. Took out of the foil and back onto the grill with another application of sauce. Total cook time about 1hr 20 minutes. Not as good as slow smoked, but not bad in a pinch.

Re: Grilled spare ribs?
Those ribs look pretty darn good to me, wouldn't mind a bone or two.
I went a comp a few years back where one of the vendors was selling ribs that were grilled (on a huge gasser) and not smoked. They had a Weber kettle in the back that they were using for entry-ribs. I didn't try any but they had a steady stream of folks eating those bones.

Not bad in a pinch ? thats the thing I hate about my new pit, it takes an average of an hour and forty-five minutes to get hot. Luckily i still have a smaller oklahoma Joes pit on the back porch to do small items on.

Re: Grilled spare ribs?
One of the things about a big heavy pit that takes a long time to come up to temp is that it also takes it a long time to lose heat... Temps stay more steady during a cook.
I have several smokers I could have used, but didn't want to fire one up since I already have coals burning in the grill.

Re: Grilled spare ribs?
Great looking bones JamesB; although not as tender I prefer grilled ribs to smoked. I grill mine on an open fire pit about 24" above a bed of mesquite coals and the wife and I just love em.
