Reverse seared Tri tip

I was supposed to cook chicken tonight, but when I went to the Market Street, they had this choice tri tip in the bin and I had to pick it up (along with some buffalo burger)

I do have a question to add to my dafffy-nition, what is "Reverse seared"?

Great looking Tri-tip :) I use sea salt, fresh ground black pepper and garlic to season my TT. What do you use on yours?

Actually, I've never seen a tri-tip for sale here. It seems to be a staple on the west coast. I was beginning to wonder if Texas cattle even had tri-tips! :lol:

Hey copkid...

Not sure where you are in Indy, but a buddy of mine can get tri-tips at the Sam's Club off of I-69 in Castleton.
