Grilled Chicken

Well, I had no plans of taking pics of tonight's meal (hence no prep photos), but after I plated it up, it looked too good not to share. Indirect cherry wood grilled chicken thighs & legs with black-eyed peas and cornbread stuffing.

Thanks, Brandon. Very simple seasoning....Sea Salt, Fresh Cracked Pepper & a little garlic powder. I brushed with EVOO while on the grill.

Thanks, guys. When I met my wife, she would not eat chicken on the bone. She grew up in a house where the chicken would get cooked on the outside, but the middle would still be raw. I quickly changed her opinion on how chicken SHOULD be, and now her plate just ends up a pile of bones. Best compliment a cook could get! :D

Wow! That looks great! I've had the same experience with chicken thighs being raw in the middle....not good eats! :cry: I love them now, especially if I cook them!

SO funny. My in-laws are from "back in the corn" in central Indiana, and although having retired from a very mobile military career, are quite fixed in their ways about things and have opinions set in concrete which are very hard to sway.

Well, their first experience with smoked chicken was at a get together for both sets of parents. I noticed that they weren't eating the chicken, but seemed to be eagerly devouring the sides. After a few vague responses I finally got the real reason out of them: "the chicken isn't done!" Well, since they cut it open and saw that it was still pink inside, the weren't having any part of eating it. I went into a long discussion of what a smoke ring is, hemoglobin yada yada yada, and finally got them to at least try it by swearing I wasn't poisoning them.

After they tried it, they ate it faster than anyone else.
