Grilled Fajitas
Grilled fajitas were on the menu tonight...
I started off by marinating three skirt steaks
I used a mixture of pecan & mesquite for smoke flavor
On the grill they went...
Sliced up
Piled up on a tortilla with sauteed onions, bell peppers & jalapenos w/sour cream & cheese

What kind of marinade do you use ??
Thanks, Brandon. That was just your typical store-bought marinade that came in a package like taco seasoning where you add water and oil. I'm still looking myself for a great fajita marinade. If ya find one, let me know!

Hey Tex, those look great! I could go for some fajitas about now...
For another great way to prepare them, check out this thread. Think I've made the best fajitas I've ever had using this method...

Looks great!
I have 6 pounds of frozen skirt steak from USA in our freezer!!
Looking forward to make some fajitas after Christmas. Any ideas for the marinade would be much appreciated. If I understand correctly, the meat is not that tender so it really has to marinated for both taste and tenderizing purposes?
When we visited Las Vegas, we ate in Pink Taco some fantastic skirt steak. I asked how they marinated it and I just remember it had cilantro, oil, lime juice, some peppers...?!?
Cheers,
Sterno

Sterno - here is a good one: http://www.texasbbqforum.com/viewtopic.php?t=5090
Texas Toby and others will have some good ones too.
Any chance you could have a butcher run the meat through a tenderizer? Thats the way I do mine.
