Grilled Fajitas

Grilled fajitas were on the menu tonight...

I started off by marinating three skirt steaks

I used a mixture of pecan & mesquite for smoke flavor

Piled up on a tortilla with sauteed onions, bell peppers & jalapenos w/sour cream & cheese

Thanks, Brandon. That was just your typical store-bought marinade that came in a package like taco seasoning where you add water and oil. I'm still looking myself for a great fajita marinade. If ya find one, let me know! :D

Looks great!

I have 6 pounds of frozen skirt steak from USA in our freezer!! :chef:

Looking forward to make some fajitas after Christmas. Any ideas for the marinade would be much appreciated. If I understand correctly, the meat is not that tender so it really has to marinated for both taste and tenderizing purposes?

When we visited Las Vegas, we ate in Pink Taco some fantastic skirt steak. I asked how they marinated it and I just remember it had cilantro, oil, lime juice, some peppers...?!?

Any chance you could have a butcher run the meat through a tenderizer? Thats the way I do mine. :wink:
