I decided to try my hand at a few different recipes out of "How to Grill." On the menu were rock lobster tails, bacon wrapped scallops, smoke roasted potatoes, grilled corn lollipops and garlic-cheese biscuits. We chased these down with Patron Silver margaritas! The recipe in How to Grill recommended wrapping the scallops with prosciutto ham , but we are a bacon-eating household so that's what we wrapped them in. It did make it a little difficult to grill due to flare-ups, but I managed OK. I cooked the lobster about 1 or 2 minutes too long, but it was still delicious. It was also the first time I smoke roasted a potato on the grill without foil and I must say that I will be doing that again. All in all, it was a success with a few lessons learned. After all the food settled, we had a nightcap bowl of homemade cookies & cream ice cream! :shock: :D

Try dipping the bacon wrapped scallops in maple syrup, it's wicked good.

This is looking killer. I'm a huge sucker for grilling seafood, that's actually why I first got into it, and always have trouble finding more people who are passionate about it cuz it's one of the most difficult things to cook. Nice job. Did you marinade in anything beforehand?

Hello smokedjoint - welcome to the forum! I'm pretty new here myself, but it's a nice place to hang out! As far as the seafood, no, nothing was marinated. Just seasoned. Seafood isn't necessarily hard to cook, it just cooks differently than meat. One big difference is speed that it cooks. You can go from succulent to rubber in a matter of one extra minute.

Don't know how I missed this thread the first time around, but that plate looks good! We grill fish of some sort about once a week... Good eats!

Yep, not only have I tried planked salmon but it's also a staple given I don't eat red meat, so I'm all about the seafood (and occasional chicken). And you're right on about the succulent vs. rubber thing, I had to learn that the hard way when I was first starting out :roll: I actually think that's precisely what makes seafood difficult -- well, maybe not so much difficult as "needy," you have to be extra careful with it. But then again that's one of the reasons I love cooking it, I'm a grab-the-bull-by-the-claws kinda guy...or, in this case, grab-the-lobster-by-the-horns :lol:
