Grilled Striper Slabs

I grilled two slabs of striper on the Chargriller. It's not my first choice of fish to cook like this on the grill, although it is still great. I prefer doing Red Snapper this way, but I haven't been deep sea fishing in over a year. I live on one of the best striper lakes in the country, so my freezer is usually well stocked with the local species! I normally don't buy fish at the store, but rather cook what I catch. The process is a follows:

Here I have two slabs thawed out from my freezer:

Next, I squeezed fresh lemon & lime juice generously over them, sprinked with garlic powder, cajun seasoning, buttered, and then freshly ground garlic pepper over them.

Then, off to the grill they went. On one, I topped with salsa once it was on the grill. I direct grilled them, scales down, over a medium-hot fire until the ends started to curl up (about 10 minutes). Cook until fish turns white and flakey.

love that striper....reminds me of roosevelt bridge about midnite with some beer and crappie rigs on texoma......haul'in in 2-3 at a time........
