Since I didn't take a brisket out of the freezer....maybe some chicken one day, pork chops maybe... :dont:

First time making stuffed burgers. Stuffed em with bacon, feta cheese and onion. They were pretty good!

Tomorrow I think I'm gonna do marinaded chicken breast with mango salsa.

Monday will probably be tilapia pouches along the lines of what Jim did awhile back.

Then it's back to ham sammies at work... :goof:

Well, got some leg/thigh quarters marinating in Walkerswood Jerk marinade and thawed out a good looking, thick, 12lb brisket.

Decided to do the chicken again on the drum (will be more careful this time) and the brisket overnight on the WSM. Heck, it's been so long since I fired up the WSM, I hope all the old techniques still work on it... :wink:

Did 6 slabs of ribs for a graduation bbq tomorrow (Sunday). They are spending the night in the refer and I will reheat. Also doing kabobs; beef (Brazilian style) and chicken thighes & breasts (Japanese-yakitori style). Also got veggie kabobs; mushrooms. sweet onions and tomatoes to grill.

This is a catering gig for 60 people so I hope pix are taken by the host family... :)
