darn James, hope it isn't too bad! Note to self, do not leave lid off drum too long while cooking chicken.

Thanks fellas... Hand is not too bad... just a bit tender on the pads of a few fingers. Prob. won't even blister...

And to think I wasn't even drinking! If I had, I probably wouldn't have been trying to multi task and take care of chores in the house as well as cook. :D

I will attempt these again!

They are steel plates used in the horizontal cooking chamber of the pit. The pit in question had 5 of them. Basically, the plates are arranged with varying distance between them to adjust the heat/smoke as it enters the cooking chamber and even out temps across the pit.

Basically, first plate is up against the firebox opening. There is a very small gap between the first plate and the second to allow heat/smoke to rise, but the majority is pushed under the other plates. As the plates go further into the chamber, the gap between them increases.
