Antelope back strap

Our son in law got an antelope in NM a few weeks ago.
He gifted me some cuts, including this back strap.

Seasoned with salt and pepper.

Grilled up some romaine hearts and asparagus, though you don’t see the asparagus, it was on the gas grill. And some crusty bread.

First time having antelope back strap, I like it better than venison for sure.

It is lean. Don’t over cook it!
It did have a bit of a rich flavor, but not very much to me.
I liked it better than, and would order it against venison every time if I had a choice.
