Grilled Rack of Lamb

Tried something new to me tonight and it certainly won't be the last. Grilled rack of lamb with Costco au gratin potato cakes and a raspberry compote dipping sauce that Mrs. Tex put together. I marinated the rack in rosemary/garlic/olive oil for a few hours, then seasoned with Sucklebusters SPG & 1836. Grilled indirect on my gas grill to medium rare 138deg with a smoke tube of cherry pellets. Whheeeww, most definitely getting added to the rotation.

Awesome. Rack of lamb is among the best IMHO. Great cooking and a fine dinner there.

I have to commend you on your documentation...
Lamb is usually beyond the pork, beef and chicken on our menu, I know it taste great just never seem to reach for it not sure why, I grew up in sheep and goat country, really like goat too, never see it in the store. Since we got citified, I haven't butchered anything in years.

Thanks, all. I grew up eating cows, pigs, chickens along with ducks, geese, dove, venison, rabbits, squirrels, etc....Not once did we ever have lamb at our house, so it's not something I've ever been familiar with. I had eaten roasted leg of lamb on cruise ships a time or two and really liked it, but that was the extent of my exposure. Same story with my wife. I took her out to eat last week for her birthday and she ordered lamb chops to give them a try. She fell in love with them and they looked great to me too. I had always been curious about trying to cook them before, so I thought I'd give it a try. Well, I'm here to tell you that it went right to the top as one of my favorite meat. Right there next to ribeyes. Can't believe I waited all my life to try. :D

I believe H‑E‑B carries them. Roast at 375 until internal temp hits 123deg. Remove from heat and let rest. Temp should rise to approx. 135-140. As soon as the temp stalls out and begins to drop back down - DIG IN!

The package I bought had two racks. One rack would have been plenty for a meal for 2. Next time if I buy another double pack, I'll cook one and freeze the other.
