Been a while since I've fired up the Kingsford so I decided to keep it simple today and grill some Tilapia filets over some Charcoal Briquets that I've sprinkled good with Suckle Busters Lemon Pepper Garlic and I'm gonna finish them with a topping of Pineapple Pico de Gallo. Our two sides will be Baked Sweet Tater and Pickled Okra. Maybe I can get some Beach Music on the FM to assist in the "attitude"

Sure did hit the Spot - - - the Wiffy really like it. When I grill Fish I usually Blacken them. However, this was my first time with Pineapple Pico and it won't be my last. I'm thinking that leftover Pico might even work with something from a Hog (pork) ?maybe? a stuffed Pork Chop ??

I used to pickle mine from a recipe that my best friend's wive used. It was the best I've ever had but I'm lazier (older) now and have started just buying it.

Yes Sir - - - hard to live down close to the Gulf Coast and not be - - I even love to catch and cook small black tip sharks on the Grill.
