We did up some tilapia the other night in the grill and we loved it. So we thought we would try it with everyone's favorite CATFISH..... :wink:

Lisa picked up some fillets today after work, they were beautiful. I rubbed them down with some garlic infused olive oil and gave them a liberal dusting of a seasoning that I have concocted. Put the fillets in a grill basket with a handle and grilled them over some lump and mesquite chunks until it flaked. Teamed it up with some beans and some sliced tomatos and cucumbers and had a wonderful meal. We are starting on a new venture on eating healthier, I see lots of fish in our future....... :wink:

Never had grilled catfish before... Gonna have to try it sometime. Looks gooooood!

When I was a kid my parents LOVED Orange Roughy. Has anyone cooked this recently? I love grilled fish, but I'd like to throw some different selection (no fried fish), I'm not sure what kind of meat roughy is, I was thinking about a pan seared with lump crab, that goes well with snapper.

What are your favorite fish to cook? I need some ideas......

DH, I love orange roughy, but it is very expensive compared to tilapia, and the textures, etc. are very similar. If there are only a couple of you to feed, it's okay, but my kids devour fish, so I can cook or grill up several pounds of tilapia for less than what two orange roughy fillets might cost. :cry:

Wow looks really good. What is the predominant flavor in your concoction?

I usally always revert to the lemon peel for seafood.
The only thing consistant in BBQ is, It's always the judges fault!
