Reverse seared Tomahawk steak

Reverse seared Tomahawk steak
Got hold of a Tomahawk steak from Omaha steaks. Rubbed it EVOO and Sucklebusters two pig mafia rub.
Planned to smoke it on the pellet smoker but the Smokefire wasn't friendly today. Have to look into that tomorrow.
Ended up cooking the steak on indirect heat on the Weber and reverse seared it at the end. Came out pretty good, but missed the taste from the smoker.
Indirect cooking on 275 until internal was 120. Reverse seared on direct heat, flipping every 30 seconds until IT 125. Basted underway with melted butter mixed with the two pig mafia rub. Rested for 20 minutes.
Served with grilled asparagus, mashed potatoes and wife's homemade bearnaise.
The steak was enough for 3 persons so pretty big.

Au contrarie, save that bone. Now, this is going to sound silly at first, but just hear me out. See, maybe an hour or two or three after dinner when you get those aftershock hungries (we all do), you go yank that bone out of the fridge and warm it up. Maybe that’s just under the oven broiler, better if over the last dying coals of the really deep bellied fire you cooked it on - and that would be especially true if over coals from a real wood fire. Just beats the heck out of charcoal or gas or, anything. And grab a nice cold beer too, a Pilsner is a good choice and one of those Ringnes is a very good choice. Now, just bare hand that bone and that beer and go sit out on the back porch in the crisp night air. And just gnaw that bone and drink that beer and gaze up at the wonder of the stars. It all works better barefoot by the way. And what you may find is, those remaining little shreds still on the bone are some of the best stuff there was, and just go great with that cold beer. It’s what we as primordials were simply meant to do, back before Homo erectus evolved into Homo sapiens and we started over-thinking everything in life. It’s like playing a sport, the best plays you ever made came out of the instinctual side of the brain, the crack of the bat or the slap shot that came from “somwhere”, the golf swing you only have once a round when you were thinking about a beer instead of the ball, the shot that breaks from the muzzle as a surprise but tracks true to center. I find much of life is like that, that too much thinkin and too little drinkin causes blinds us to what we already know. I think we lose a lot from life when we don’t have that still peaceful quiet sometimes. Had many a good muse over a bone and a beer.
