I went old school (at least for me) a couple days ago. Marinated a couple breast in Zesty Italian for 4 hours and grilled. Seared at around 600 grate temp on the mini egg then roasted at 350 on the small egg. Dang good.
Ended up cutting the thin end off at 165 and letting the thick end cook until it reached 160 and tented for ten minutes. Gotta do this more often - simple but excellent.

I've been able to get a more even grill time by flatting out the breasts to an even thickness.
