I got a corned beef I was going to do the same thing but smoke first then Sous Vide. Any thoughts on what process is better?

I don’t know enough to say what’s better. I’ve just always sous vide first and then grilled or smoked. In between I plunge the meat in an ice bath to bring the temp down. That allows it to stop cooking out of the sous vide and spend more time on the grill to absorb smoke.

There are some recipes out there that go in reverse order. Try it out and let me know your thoughts.

Holy Moly. I’ve done a 24 hour cook before and had to go face down in the yard for a while, would never have made it to 30!

Haha - the majority of it was just checking the water level every 6-8 hours.
