I said Skirt Steak and not Flank Steak but I read that Flank and London Broil are the same but London Broil is really the "process" I think ?? and not the cut of meat, per say.
Skirt and Flank are slightly different but close to the same.

Yes, and skirt steak is hard to get here. Flank steak was a respons to the London Broil.
I've never made London broil but I understand it originally was made of flank steak but has evolved into a general word for the process.

I really prefer the fat on the Skirt Steak when cooking the meat strips, pepper strips and Own-Yawn Strips together - - - yum yum
