1) Brined for 8 hours in one gallon of water with 1/2 cup in sugar and 1/4 cup salt.
2) Patted dry and rubbed with S/B Honey Hog Waller.
3) Seared
4) Into a bath, covered with foil and back on the pit for 1-1/2 hours
5) Seared after the bath
Bath:
1 cup S/B peach BBQ Sauce
1/2 cup S/B chipotle BBQ Sauce
1/2 cup S/B Honey BBQ Sauce
1 cup beer
1/2 onion
1/2 bell pepper
2 Tbs chopped garlic
