Time to stock the freezer

I like to keep a stock of vac sealed bags with pulled pork and brisket in the freezer. Since I needed an excuse to stay home and watch football all day I told the wife it needed to be done today (or overnight) :)

Temps were right this morning so I cold smoked some cheese on the kettle as well.

I’ll try and get some sliced / pulled pics later. The bologna was lunch…it was good.

Yes it is. Was about 42 this AM so I didn’t even have to add an ice tray to the cheese. Perfectly still too. Gorgeous out now.

Welp, ‘twas good. I think I am becoming a KAM convert. Second time I have used his pan method and it is hard to argue with the results. Brisket was moist and had good flavor. The Hogwaller Honey was killer on the pork but.

Oh yes, he knows that’s where I stand to cut meat. He makes sure he is in position for any drops. Of course he gets some in his bowl as well.

Been way too long since I've had a Brisket so now I'm drooling even more...
Lol, ur Dogs eyes are a good giveaway... He's thinking..Hmm, all I need is one nanno second for him to look at the TV and I can grab that end piece and swallow it whole before he can even know what happened...lol.

Like the saying goes ___________...Its always easier to ask for forgiveness than it is for permission...

Very nice. What is the story with the bologna? You slice it and freeze it or do you freeze it whole then slice when you thaw out?
