Throwin’ some chops together

Had a fairly decent temp day for a change in NTX. Seems like we got the cloud cover and cooler temps just being out of Barry’s reach. I feel for the people dealing with the flooding and other issues that were actually in its path.
Decided to take the opportunity to cook some pork chops but got a little crazy along the way. The chops were cooked sous vide for 1 1/2 hrs at 140 degrees. The. Tossed on the Weber seasoned with Hogwaller Honey and topped with mozzarella and some roasted hatch Chile’s I had in the freezer. Couple of chunks of cherry for some smoke. The side was fresh green beans and fingerling potatoes seasoned with SPG.
The chops were good but honestly, I had a bite with just the seasoning and it was all that was needed. Will do again and just let the Hogwaller Honey do the talking.
