Flat Iron Steak and Shrimp

It's been a while since I posted a cook here, but Mother Nature held my grilling off for a few weeks. I had a pair of wrens that built a nest in the overhang of my Q shack and the smoke tends to roll right over the nest area, so I held off on the smoke until I was sure the baby wrens were fledged...I'm such a softie. :D

Babies are gone.......smoke's on!

Flat iron steak and shrimp - the shrimp and flat iron steak were on sale this week.......the shrimp a little small, and I've never cooked a flat iron steak before. :D

Rubbed the steak with Oakridge Carne Crosta and cooked hot and fast with some mesquite smoke on the Egg. Ran the steak to about 125 on the thick end when I pulled.

I think I got this right. :D

You nailed it. Flat irons have a great beefy flavor and mesquite smoke does them right. Nicely done!

Looks like I missed out on the grilled food. Mercy me I’d eat all of that and have a shiny belly for sure.
