Not-Russ-Dust Chicken Breast

Postby Professor Bunky » Thu May 30, 2019 7:32 pm

We've made chicken many times using the Tandori spice mix Russ provided and always liked the results. We wondered how it would work if we used the same technique but with some other spice mix. So we cut up some chicken breasts, soaked them in orange juice for 20 min and then added yogurt and SB Clucker Dust. We let it sit in the fridge for a few hours and then grilled it on the small Weber gasser, after a final application of more Clucker Dust. Since the pieces were of verying thicknesses, some were a bit overdone but still tasty. We served them with a spinach & carrot mix and some fries.

I don't know what's in it but it's delicious. Spice mix for Tandoori chicken/lamb....would probably also work on pork!

Hey Joe, Russ Dust was my nickname for some great Tandoorie Spice that Russ made and shipped to MOI and some other Forum Fortunates a couple of years ago.

And I'm here too.

Joe it's a Garam masala mix I make up, you just add yoghurt to it. I put the red colouring in it as well, so it's pretty much how we get our tandoori lamb and chicken. Just easier as I make a big batch at a time. Usual suspects cumin coriander fennel seeds dry roasted then ground along with about 8 other spices like cinnamon cassia bark etc.
