A little cooking going on today.
Brisket seasoned with Sucklebusters SPG and 1836.
Pork Butt with Meat Church Honey Hog and Honey Hog Hot.
Might as well toss on a naked fatty for breakfast seasoned with Sucklebusters Hog Waller Honey (oh yea…tasty). Wife hopped on the Blackstone and started with some potatoes and eggs while I drank a Bloody Mary. That was a nice twist

Brisket is out and resting. Unfortunately my brisket coolers are buried in the back of the shed so it’s going to have to go in the oven as low as she’ll go for a while. Pork butt is already in there, forgot the pic but will get one when we get ready to pull it.
Went with the the KAM method just to try it out. He seems to be about as consistent of a cook as I’ve seen and consistency is one of the things I need on my brisket cooks.

Well the pulled pork was outstanding and the brisket was ok…I’ve done better and I’ve done worse. I don’t blame the technique, wasn’t crazy about the actual brisket to start with. Not much of a flat or good fat, just bought it because it was on sale. I actually think KAM’s technique might’ve helped it out. Either way, everybody left full and happy.
