Rib Roast.

A great day to roll the smoke - rib roast is in order.

A three rib roast rubbed with SuckleBusters SPG and on the the pit at 250 with a load of hickory chunks for smoke. Smoked to 115, pulled and rested while I got my BGE going for a sear:

Rested loosely covered for about 25 minutes and then seared on the BGE hot - about 2 minutes each on all sides:

It's holding in the Cambro until my wife gets the scalloped spuds and corn on the cob ready to go. I'm ready to dive in NOW! :D
