A great day to roll the smoke - rib roast is in order.
A three rib roast rubbed with SuckleBusters SPG and on the the pit at 250 with a load of hickory chunks for smoke. Smoked to 115, pulled and rested while I got my BGE going for a sear:
Rested loosely covered for about 25 minutes and then seared on the BGE hot - about 2 minutes each on all sides:
It's holding in the Cambro until my wife gets the scalloped spuds and corn on the cob ready to go. I'm ready to dive in NOW!
Plated and sliced pics to follow soon.

Hey Piney, I removed two of your "deleted" threads - - - hope that's what you wanted. It appeared that this one was the Good One
