My family lived in Lafayette, LA for a little over a year when I was a young teenager (many moons ago :D ). I fell in love with Cajun cooking of all kinds, but I really loved crawfish boils.

Those are some serious looking crawfish and I would belly up to a mound of them and eat until I pop. :D

Killer boil! :salut:

I have been saving my change for the last few weeks. I want to buy a sack just for ourselves so we can peel and save the tail meat. I know you can buy frozen tail meat for pretty cheap but they just don't taste the same. The texture is different to me too. It might all be in my head though.
