Bone In Rib Eye Night In The Poconos
Well it's about time !!!
Been way too long but tonight was a quick but excellent tasting meal.
I know it was good when the wife eats the entire Steak as she's not big on ordinary steaks because they are never cooked like she wants them. Probably one reason I don't do many. On the other hand, she has $$$$ taste because she never turns down Prime Rib but that's not happening but maybe twice a year but tonight she absolutely loved this. She even picked them up lol. She did real good, 5$ a lb too !!
Anyways, just a simple S&P with Olive Oil on a hot grate for 3 minutes a side with a 650 dome temp over Royal Oak Lump.
I always let beef sit at room temp for at least 30 minutes but this time it was 1 hour. I think that really helped it cooked perfectly. By the way it felt, I'm guessing it was about 145/50 internal temp when I pulled them, let em sit 10 minutes and did the usual of adding the liquids along with Butter and some Balsalmic to a hot pan for a quick bit before pouring it over the Steaks just before piling the Caramelized Bellas and Vidalias on top ( sorry, I had a brain fart and " missed " those pics )....Grrrrrrrrr...
Oiled up some Mrs T's Pierogies and hit them with some S&P and on the grill they went for 5 minutes a side. Brushed with some Butter and sprinkled some Shredded Parm Cheese and a quick melt and they were done.
Nuked some Fresh Corn, used Melted Butter, Old Bay and Grated Parm.
Definitely a good dinner especially after I kicked Old Murphy Out !!

9 times out of 10 I'll do Sauteed Onions and Butter with the Pierogies but this time it was saved for the Rib Eyes.
I'm kicking myself for missing the pics of the Onions and Shrooms. It was without a doubt the Best Pic of the night and I muffed it up .
Between the Rib Eye and the Shrooms/Onions, it was a good 2" high

To be honest, it was the very first time that I've ever grilled Pierogies. Usually, they are sauteed but figured I'd throw em on the grill since it was already hot and the back of the bag showed that option as well.
Definitely gave it a nice crunch.
