What to do with leftover ribeye

I had about 8oz of leftover ribeye steak so I cubed it into some hash browns with onion, green and red bell peppers, s&p, and some tarragon.

Topped with 2 fried eggs (hit the yolks with tobasco, and some green onion.

Next time I need plan better and have a Bloody Mary ready to go.

Very nice. I intentionally buy the kids a bigger steak than they’ll eat so I have leftovers for steak and eggs. Breakfast of Champions
